There are mainly four breeds in wa-gyu (wa means Japanese and gyu means cattle): Japanese Black, Japanese Brown, Japanese Polled, and Japanese Shorthorn. Japanese Kobe Beef is from Tajima-ushi, which is one of Japanese Black. Tajima-ushi are fed on natural feed such as barley, wheat bran, and grass, and good water in Tajima region. Among Tajima-ushi, beef which meet special criteria become Kobe Beef. The beef must be ranked in Grade A or B with fat BMS number 6 and over by Japanese Association of Meat Ranking. CORNED BEEF AND CABBAGE • 1 packaged corned beef (size depending on the number of people or how hungry you are) • 4 onions • 4 carrots • 4 stalks of celery • 4 cloves garlic • 1 head of cabbage • 1-2 boxes of chicken stock - I like to use the organic free range stock that comes in boxes in the organic section of the grocery store. They tend to be a lot less salty and have better flavor. • 1 bottle of your favorite beer • peppercorns Peel, trim and string all of the onions, carrots, garlic and celery. Quarter 2 onions, cut two carrots and two ribs of celery into 3 inch pieces, and slightly smash garlic. Layer cut up vegetables and garlic around the outside bottom of your crock pot or a large pot with fitting lid on the stove. Adjust heat to low. Rinse corned beef, nestle into vegetables and add spice packet that comes packaged with the corned beef plus 1 teaspoon of whole peppercorns. Add beer and enough stock to cover.
